We have an inventory connector in which we switch products as out of stock by updating the is_in_stock column from cataloginventory_stock_item and the stock_status column from cataloginventory_stock_status as well as the _idx table. When both fields are set to 0 it only marks the product as out of stock on the catalog even though System &gt; Configuration &gt; Inventory &gt; Stock Options &gt; Display Out of Stock Products is set to No. There must be another switch in the database somewhere, but I just cant find it.</description>

Yes, you could have different templates as well, but this method is not required for that, as you could have different themes within the same Magento database/configuration.
